I just wanted to know what I should fix for dinner. Really.  The more I researched nutrition on my own, the more confused I became. Until… Eureka! I found it!  A framework for nutritional truth that not only made sense, but it also confirmed my faith.

I lost 33lbs, my sleep improved, my moods and energy stabilized, my digestive discomfort and allergies began to slowly disappear.  But the real transformation was my new perspective of who God is and His design for my wholeness.

When I first started researching food and nutrition, I just wanted to know what I should fix for dinner.  Really.  Should our family be vegetarian or even vegan?  Should we be eating all low-fat stuff?  Is organic all it’s cracked up to be?   Sugar…is it all that bad?  (I hoped not…cause I liked it!)  It’s ironic that as I read more and more information; I became less and less certain on what was truly nutritious food.  So I took a break from it all.  I just fixed whatever was cheap and easy, and threw in a few fruits and veggies to avoid feeling guilty!

But, as time passed, my family and I were experiencing some health issues I wanted answers to.  Not major ones; nothing that couldn’t be alleviated with Benadryl, Tylenol or chocolate!!  However, I still wanted some answers…so, I asked God to guide me, and He gave me renewed interest in nutrition and began leading me on this amazing journey!

I started reading about whole foods.  I started buying more of our family’s food from a local farm.   It was at this local farm that I learned about the Weston A. Price Nutrition Foundation. Their information cut through all the confusion, all the hype and really made sense. There was no agenda, no profit to be made, and no product to sell. It was based on real science and based on real history of real people.

I wanted to learn more, so I signed up with the Nutritional Therapy Association to become a certified Nutritional Therapist.   Building on my bachelor’s degree in Physical Education, the training I received with NTA gave me the answers I had been seeking!  While studying nutritional therapy, I discovered that instead of nutrition science contradicting my faith… It confirmed it. I studied every passage of Scripture on food, comparing the nutritional therapy concepts I was learning to those in the Bible.   A connected framework began to emerge!

Eureka! I found it! This is what I want to spend my life learning and helping others to learn!

As a result, my family’s health issues; allergies, depression, asthma, intestinal cramps, fatigue, bed wetting, low back spasms, extra weight; began to decrease.  We were not dieting, restricting calories or using any breakthrough products.   We were just eating real food in balanced ratios and including some targeted supplements. We don’t eat perfectly all the time, believe me, and it does take effort to make these changes, but I can promise you: It is well worth it! I personally lost 33 lbs, seasonal allergies were no longer an issue, my energy stabilized, sleep cycle improved, my hypothyroid and digestive symptoms slowly disappeared.  Those were just my physical benefits.  The real transformation was my new perspective of who God is and His design for my wholeness.

I would much rather spend money, time, mental and emotional energy on WELLNESS vs. illness.  But living well,  living strong is a means to an end.  I serve a higher purpose… My body is temporary.  But I honor it.  My physical health will eventually fade.  But I preserve it.  Why?  To know Him and make Him known through nutrition.

I understand the "why" behind the "how"

“I’ve learned so much from Karen!  Her passion for nutrition is evident and her compassionate approach was just what I needed.  I’ve struggled with my weight for years, and have tried different diets off and on.   Now, I’ve finally found the balance I can stick with for the rest of my life.  I’ve lost 22lbs and over 18 inches!  I feel 100% better and now I understand the “why” behind the “how”.  I highly recommend her program!”

It is more than just what I eat, it is how all the pieces fit together…

As important as nutrition is…I’ve also have seen how rest, stress management and exercise can impact my overall health. Being a mom of three, I am able to use what I have learned over the years in my own home. From picky toddlers to my own sensitivities my cooking has definitely changed over the years. I enjoy trying new recipes and new foods.

From working with children and mothers, to helping patients at an integrative medicine clinic, to EHN; nutrition and health are my passion and purpose. From walking my own health journey; I count it a privilege to walk with you on yours.

My love for nutrition started with my own health journey as a teenager. I was experiencing stomach issues and after seeing different doctors it seemed like we were just managing my symptoms. It wasn’t until I finally saw an integrative practitioner who looked at the whole picture that we found the root cause. As we started treatment, stress and diet were two major areas I needed to focus on. I was able to meet with a Dietitian who helped me make changes to my eating pattern. It amazed me how much the food I ate could impact my overall health. I went off to college knowing exactly what I wanted to major in. I wanted to help others with dietary changes that could ultimately change their health too!

I started my career in public health working with children and pregnant/postpartum women. Though I loved my experience in that area I longed to help others like I had been helped. I was then blessed to spend several years in an integrative clinic where I was able to coach and walk alongside patients in their health journeys. One of my favorite things was being able to help patients find new substitutes to replace a food sensitivity in their diet.

Now being a mom of three, I am able to use what I have learned over the years in my own home. From picky toddlers to my own sensitivities my cooking has definitely changed over the years. I enjoy trying new recipes and new foods. I have also seen how rest, stress management and exercise can impact my overall health. It is more than just what I eat, it is how all the pieces fit together.

I am so thankful to be a part of the Eureka Holistic Nutrition team because I truly love helping people with their dietary changes. To me it is more than just telling someone to eat this or that, it is finding the combination that works best for their specific needs. It is amazing that the food God has created can nourish us and bring healing when needed. I am excited to work alongside you as you continue your own health journey!

Feeling Better

“You’ve offer so many great nutrition tips to me that have literally changed my life!  But what means the most is that you’ve done it patiently, answering all my many questions.  I’m thrilled to be feeling better than I have in a very long time!”

If you had told me 10 years ago that I would be in the health/wellness industry, I wouldn’t have believed you. My diet/lifestyle looked quite different than it does now.

My health was shaken abruptly when I started to experience fatigue, digestive issues, depression, and joint pain that took me to specialist after specialist who couldn’t give me a clear answer.

I made a key discovery that lead me down a path to reclaim my wellbeing! My favorite part of my job is when I can help someone else make that same discovery for themselves!

I’m excited to be a part of this team and even more excited to be on this journey with you. If it’s one thing I’ve learned over the years is God intends for you to find others for guidance along your path… we are not meant to do this alone.

I am a proud wife and mom. I am blessed to have found my passion at a young age and with that, I became a certified functional nutritionist in 2016. If you had told me 10 years ago that I would be in the health/wellness industry I wouldn’t have believed you. My diet/lifestyle looked very different than it does now. My path started with very abrupt health issues specifically fatigue, poor digestion, depression, and joint pain that took me to specialist after specialist and they couldn’t give me a clear answer. I realized I would have to do this on my own and that was really scary. I discovered a gluten free diet and that lead me down the rabbit hole of so much nutrition research. I then found functional medicine where they discovered the root causes…low stomach acid, gut dysbiosis, low thyroid function, many food intolerances..the list goes on.

Wow, there actually is clear evidence that something is going on, it’s not just in my head!

I decided I needed to have my voice heard any way I could and help people with their journey. It first started with a blog where I could voice my experience and connect with individuals. That was not enough for me, so I decided to dive into nutrition and go back to school. What a fun ride!

My favorite part of my job is when I can help someone discover something, whether big or small, that makes a huge impact in their health. It’s such an empowering feeling and it brings me so much joy when I can witness that in others.

My hope is that you embrace this journey because it often takes you in all kinds of directions. It can seem like an emotional roller coaster but when you seek guidance from someone who’s been there, it can be a game changer in your health discovery.

I am happy and proud you have decided to take that next step towards better health and well-being. It will be the best decision you ever make for yourself. Glad you are here!

Passionate

“I was on birth control for 7 years and Madison helped me get off of it and level out my hormones naturally. She not only recommended foods & supplements, but explained why this piece was so important.  She is so passionate about her field and it shows in the way she helps others!’’

If I knew then, what I know now…

Sugar and stress were my health hazards! It was tough changing my taste buds and my way of eating. But it was worth it!

As a registered dietitian nutritionist, I am excited to offer nutrition plan reviews, consult 1:1 to provide the customized path that is unique to YOU!  Education is key, but applying the knowledge is transforming!

As a teenager living in California, being fit and looking healthy was of utmost importance. Working out and trying the various fad diets led me to realize that eating a clean diet (which was the same that my mom used to cook) was the way to go for energy, stamina, mental clarity, and sense of peacefulness.

But, I also ate a lot of sugar.  As I transitioned to adulthood, I started eating too many sweets like I did as a child. Unfortunately, it started to show in my waistline even though I was working out!  Abs are made in the kitchen, not the gym. I truly became a sugar addict—every time something went in my mouth, it had to include chocolate cake, cookies, ice cream… along with some healthy stuff.  However, as a child I would burn it off.  But, what I didn’t realize then, is that all the sweets messed up my gut in a huge way! This came to fruition as an adult. The sugar cravings overpowered me. I kept saying, “Use your will power, Loren!” But will power was not enough.

It wasn’t until a Functional Medicine doctor explained what was happening in my gut and body that was causing this…  certain types of sugar were addicting!   And those were the ones I was eating the most!  I had to turn off the cravings! It was tough changing my taste buds and my way of eating. But it is worth it.  My weight normalized, and I was feeling strong again.

Once I started dietitian school, a whole new world of information opened up to me.  I now had evidence based research to confirm the lifestyle choices I was making.  I was thrilled I was on the right track.  Plus, I learned I still had some work to do on my diet and health with some risk factors of family medical history.   We never stop learning, right?!

Unfortunately, during 3 of the 4 years of dietitian school, I experienced extreme stress and resorted back to some previous ways of eating. The stress negatively affected my gut, brain, entire body—it is all connected.  The good news is my knowledge paved the way to recover my wellbeing!   I recognized what I can do on my own and what I would need a professional to help me.  Had I known what I know today back many years ago, I would have been empowered to prevent health issues before they became a problem.

As a Registered Dietitian Nutritionist, it is so rewarding for me is to share my knowledge and experiences to help others overcome sugar addiction, to gain energy and vitality again.  I’m excited to partner with you on your health journey to wellness!

“Thank you, Loren for all the practical help with nutrition! I continue to apply what you’ve shared, and I’m able to keep my blood sugar within the normal ranges!”

I was afraid to eat away from home because I didn’t know if I was going to react to the food or not. My doctors told me it was no big deal mainly because they did not know why it was happening.  I used to think I was healthy because I was not diagnosed with a disease.  Then my daughter started having unexplained breakout rashes.

After making some key changes to our family nutrition, my gut symptoms improved and my daughter’s rashes were gone!  PLUS, I was able to lose a significant amount of weight which I had slowly added on each year especially after the pregnancies.

I saw firsthand how small steps improved my health and I would love to come alongside you to help make actionable changes in your life so that you can focus on what matters and live more victoriously!

My health journey began after I struggled with digestive symptoms for many years to the point where it affected when and where I ate. I was afraid to eat away from home because I didn’t know if I was going to react to the food or not. My doctors told me it was no big deal mainly because they did not know why it was happening but it really stressed me out.

After years of defeated living my final straw came after my youngest daughter started to break out into rashes as a young child. I was puzzled and once again the doctors didn’t have any answers. So I started researching and learning all I could about holistic health. I learned about clean eating and healthy lifestyles and I started to make changes for our family. I used to think I was healthy because I was not diagnosed with a disease. However, after the changes we made my gut symptoms got better and my daughter stopped having rashes. Now years later my family and I are truly in a much healthier place than we have ever been. Additionally, through these changes in healthier eating and lifestyle I was able to lose a significant amount of weight which I had slowly added on each year especially after the pregnancies.

With a desire to learn even more about the science of healthy eating I became a certified Nutritional Therapy Practitioner with the Nutritional Therapy Association. God has given us an amazingly engineered body that thrives best when given the right nutrients and support. I saw firsthand how small steps improved my health and I would love to come alongside you to help make actionable changes in your life so that you can focus on what matters and live more victoriously!

A little about myself. I am married and have two children. I learned German while living overseas for a few years in Germany. Also I enjoy cooking and baking and in my spare time I love to relax with a good book.

Gentle

“In reaching out for assistance with my diet, which I recognized wasn’t the best, Sarah gently helped me through a period of discovery of what I was eating, drinking, and snacking. At first, I was apprehensive, but she took the time to explain all about the interactions of the food I was eating. Her explanations helped me to recognize areas I could change and gave me direction towards advancing to reach my goals.”

The journey you are about to enter is one that is near and dear to my heart. If an opportunity such a Eureka had been around ten years ago, it would have been life-changing for me.

Despite my efforts to eat healthy, each year I found the scale increasing five pounds and after a few years, that adds up to a startling number! Knowing how important exercise was to not only my physical health, but also emotional well-being (this home school mom really needed an outlet to have for myself), my husband gifted me a gym membership for Christmas several years ago. Best gift ever. It wasn’t long before my family referred to me as a “gym junkie” and, to be honest, I was perfectly fine with that title. It felt good. I had energy I hadn’t had in years. Not wanting my time in the gym to be for naught, I made changes to my diet.

I am excited to be part of Eureka! and to combine my passions of nutrition, exercise, and love of Jesus into one fantastic opportunity. You have a fantastic and knowledgeable team that is eager to help empower you to improve your health and your family’s.

Between my competitive, athletic nature and my mom’s determination to make me a less picky eater and instill a love of vegetables in me, you would think I had nutrition and health down to a science. But Despite my efforts to eat healthy, each year I found the scale increasing five pounds and after a few years, that adds up to a startling number! Then I received the best gift ever!

That gift has led me down a path to take charge of my health and weight and help others to do the same!  I am excited to be part of Eureka! and to combine my passions of nutrition, exercise, and love of Jesus!

The journey you are about to enter is one that is near and dear to my heart. If an opportunity such a Eureka had been around ten years ago, it would have been life-changing for me.

During my childhood years, participating in sports consumed many hours of my life. Between my competitive, athletic nature and my mom’s determination to make me a less picky eater and instill a love of vegetables in me, you would think I had nutrition and health down to a science. Twenty-four years ago, I was blessed by God to marry my best friend, and God blessed us with two amazing children, now young adults. He put on my heart to do the ever challenging task of home schooling, which allowed me to use my education degrees at home. Being a stay-at-home mom meant my husband worked many hours to support our family to allow me to teach our kids. This left very little time for exercise (or at least that was an excuse I had).

Clearly, my healthy eating habits weren’t what I thought or I wouldn’t have accumulated the weight each year. I gave up gluten and most sugar and noticed an improvements in my gut health. Vegetables became a priority for every meal. I found myself soaking up nutrition books with a desire to learn and to discern the many conflicting reports about diets and health claims. My time at the gym, soon led me to seek personal training certification. Although initially to improve my own understanding, it led me to help others improve their physical health.

I’m thankful I have been able to support people in a variety of places including a homeopathic medical center with their weight loss program and a senior health coach for a national weight loss company. While these experiences have blessed me and continued to increase my knowledge, they haven’t combined the truths of God’’s word to really get to the heart of how He intended us to care for our physical bodies. I am excited to be part of Eureka! and to combine my passions of nutrition, exercise, and love of Jesus into one fantastic opportunity. You have a fantastic and knowledgeable team that is eager to help empower you to improve your health and your family’s.
